Surumeika, also known as summer squid, is at its peak season. We’ve lightly cooked it to preserve its tenderness and savory taste.
Naruto Wakame is the brand name of wakame seaweed harvested in the area around Naruto City, Tokushima Prefecture. It is known for its vigorous growth in intense tidal currents, such as the famous Naruto Whirlpools. As a result, it has a firmer texture compared to regular wakame seaweed and is characterized by its vibrant green color.
The Japanese leeks are lightly blanched to retain their crispness, enhancing their natural sweetness. With the addition of our gentle and refreshing vinegared miso, made with Saikyo-miso and apple vinegar, the flavors of this dish multiply synergistically. Plating it in a glass container not only adds to its visual appeal, but also brings a cool and refreshing breeze to your dining table.
